Refreshing Cucumber Salsa

What you need:

1 cup cucumber, cut into one inch pieces

¼ cup orange bell pepper (or Red or Yellow)

¼ cup red onion

1/2 Poblano pepper, seeded

1 garlic clove, pressed

3 tbsp sherry vinegar  (or Rice or White)

1 tbsp vegetable oil

¼ teaspoon sugar

For the salsa, using the a Food Processor (I used my manual food processor), chop the cucumber, bell pepper, onion, poblano pepper and garlic. Place the mixture in a medium bowl and add the vinegar, oil, sugar, mixing well. You can add salt at this point, but I found it too salty with already salted standard tortilla chips.
