Yum, yum, YUM! I am eating leftover boats as I type. Lets jump right into this light delight.
3 zucchini (cut in half with the seeds scooped out, THINK BOAT)
4-5 Roma Tomatoes (seeded and diced)
4 oz of fresh grated Parmesan cheese.
2 tbsp. fresh basil leaves (minced)
2 cloves of garlic (minced)
2 tbsp. olive oil
1. Add 1 tbsp. olive oil to skillet on medium heat and saute garlic for 1-2 minutes (until fragrant). Let cool.
2.Combine tomatoes, basil, 3 oz of cheese, sauteed garlic and oil, and salt and pepper in mixing bowl.
3. Brush outside of zucchini with olive oil and then stuff boats with tomato mixture.
4. Place boats on med-high covered grill for 15-20 minutes. Watch the bottoms for char and move up to top shelf if needed.
5. Remove and top with remaining grated Parmesan cheese. ENJOY!
